It’s official: I now have a favorite backpacking recipe and it’s cheesy pizza pan biscuits. As part of my ongoing quest to not eat solely mac n’ cheese, I’ve been expanding my diet with recipes from trailcooking.com.
I’ve field tested this recipe four times. The first time, I cooked the biscuits on a pan that I had cooked bacon on in the morning, so I decided that I needed to test the recipe again to make sure the wonderfulness of bacon wasn’t skewing the results. It hadn’t. The cheesy pizza pan biscuits received enthusiastic positive reviews every time I made them. I also served them to my frisbee team at a tournament, which shows that these biscuits are even good in town.
The only change I made was to increase the serving size. You need a lot of these guys to feed hungry hikers. I didn’t bring enough on my first trip, but thankfully no one stabbed me in the night with a hiking pole.
